Elle permet de comprendre les obligations applicables \u00e0 un \u00e9tablissement de restauration, d\u2019identifier les risques pouvant compromettre la s\u00e9curit\u00e9 des consommateurs et de mettre en place une organisation conforme aux exigences d\u2019hygi\u00e8ne.<\/p>\n<p data-start=\"1093\" data-end=\"1481\">Pens\u00e9e pour \u00eatre directement utile sur le terrain, cette formation alterne apports r\u00e9glementaires, m\u00e9thodes concr\u00e8tes et mises en situation en cuisine professionnelle. L\u2019objectif n\u2019est pas seulement de conna\u00eetre les r\u00e8gles, mais de savoir les appliquer au quotidien dans la gestion des denr\u00e9es, des locaux, du mat\u00e9riel et des pratiques de production.<\/p>\n<h2 data-section-id=\"10twn3f\" data-start=\"1483\" data-end=\"1511\">Objectifs de la formation<\/h2>\n<p data-start=\"1513\" data-end=\"1578\">\u00c0 l\u2019issue de la formation, le participant devra \u00eatre capable de :<\/p>\n<ul data-start=\"1580\" data-end=\"2211\">\n<li data-section-id=\"ybidvq\" data-start=\"1580\" data-end=\"1693\">comprendre les grands principes de la r\u00e9glementation li\u00e9s \u00e0 l\u2019hygi\u00e8ne alimentaire en restauration commerciale ;<\/li>\n<li data-section-id=\"13gtzgv\" data-start=\"1694\" data-end=\"1779\">identifier les principaux dangers susceptibles d\u2019alt\u00e9rer la s\u00e9curit\u00e9 des aliments ;<\/li>\n<li data-section-id=\"9tr9nv\" data-start=\"1780\" data-end=\"1861\">mettre en place les bonnes pratiques d\u2019hygi\u00e8ne dans l\u2019organisation du travail ;<\/li>\n<li data-section-id=\"17o36op\" data-start=\"1862\" data-end=\"1943\">appliquer les principes de pr\u00e9vention tout au long de la cha\u00eene de production ;<\/li>\n<li data-section-id=\"elwhg9\" data-start=\"1944\" data-end=\"2038\">int\u00e9grer les bases du Plan de Ma\u00eetrise Sanitaire dans le fonctionnement de l\u2019\u00e9tablissement ;<\/li>\n<li data-section-id=\"1k44q4i\" data-start=\"2039\" data-end=\"2129\">assurer un suivi rigoureux des autocontr\u00f4les, de la tra\u00e7abilit\u00e9 et des non-conformit\u00e9s ;<\/li>\n<li data-section-id=\"u97jyq\" data-start=\"2130\" data-end=\"2211\">r\u00e9agir de mani\u00e8re adapt\u00e9e en cas d\u2019\u00e9cart, d\u2019anomalie ou de contr\u00f4le sanitaire.<\/li>\n<\/ul>","protected":false},"excerpt":{"rendered":"<p>La formation en hygi\u00e8ne alimentaire s\u2019adresse aux professionnels de la restauration commerciale qui doivent ma\u00eetriser les r\u00e8gles essentielles de s\u00e9curit\u00e9 sanitaire dans le cadre de leur activit\u00e9.
